Ingredients
- 1 kg waxy potatoes

- 2 tbsp fresh chives, chopped
- 2 tbsp fresh parsley, chopped

- 2 hard-boiled eggs, sliced

Instructions
Step 1 – Cook the Potatoes
Wash the potatoes and cook them in salted water for about 20 minutes, or until tender.
Drain and let them cool slightly.
Peel while still warm and slice into thin rounds.
Step 2 – Prepare the Dressing
Heat the broth in a saucepan.
Add:
- vinegar
- mustard
- sugar
- onion
Season with salt and pepper.
Let simmer for 2 minutes.
Remove from the heat and stir in the oil.
Step 3 – Combine
Pour the warm dressing over the sliced potatoes.
Mix gently until every slice is coated.
Allow the salad to rest for 20–30 minutes, so the potatoes absorb the dressing.
Step 4 – Finish
Fold in chopped parsley and chives.
If using bacon, sprinkle it over the top just before serving.
