Ingredients
  

Burrito Fillings

  • 1 can black beans, drained and rinsed
  • 4 large eggs, scrambled
  • 2 cups mixed vegetables (e.g., bell peppers, onions) Heartier veggies work best.
  • 1 cup cheese, shredded Use regular or vegan cheese.

Wraps

  • 4 large tortillas Choose sturdy tortillas to avoid ripping.

Instructions
 

Preparation

  • Prepare all the fillings: scramble the eggs, cook the veggies, and mixture with black beans and cheese.
  • Cool the filling before assembling the burritos to avoid sogginess.

Assembly

  • Lay out all your tortillas and fillings in an assembly line.
  • Spoon an even amount of filling onto each tortilla, being careful not to overstuff.
  • Fold in the sides of the tortilla and roll it tightly from the bottom up to enclose the filling.
  • Wrap each burrito tightly in foil or parchment paper.

Freezing

  • Place the wrapped burritos in a Ziplock bag or freezer container.
  • Freeze the burritos separately before bagging them together to prevent sticking.

Notes

For best results, double wrap in parchment first, then foil. When reheating, microwave for 2-3 minutes and finish in a skillet or oven for extra crispiness.
