Ingredients
  

Empanadas Filling

  • 1 lb Ground meat (beef, chicken, turkey, or your choice) Can use any type of ground meat available
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Tomato paste
  • 1 tsp Paprika Add more chili powder for a spicier filling
  • 0.5 tsp Cumin
  • to taste Salt
  • to taste Chili powder Optional, depending on spice preference
  • 1 package Store-bought dough for empanadas Can use any brand of dough

Ground Meat Casserole

  • 2 large Potatoes, thin-sliced You can also use sweet potatoes
  • 1 cup Peppers, chopped Any color of bell peppers works
  • 1 cup Canned tomatoes Either diced or crushed
  • 1 cup Cheddar cheese, shredded Feel free to use any cheese of choice

Instructions
 

Preparing the Empanadas

  • Preheat the oven to 375°F (190°C).
  • In a skillet, brown up the ground meat over medium heat.
  • Add chopped onion and minced garlic to the skillet and sauté until softened.
  • Stir in the tomato paste, paprika, cumin, and season with salt and chili powder to taste.
  • Let the mixture cool slightly, then spoon into the dough circles and fold over.
  • Seal the empanadas and place them on a baking sheet.
  • Bake for 20-25 minutes, or until golden brown.

Making the Ground Meat Casserole

  • In a baking dish, layer the thin-sliced potatoes evenly.
  • Spread the browned ground meat mixture over the potatoes.
  • Top with chopped peppers and canned tomatoes.
  • Sprinkle shredded cheese on top.
  • Bake uncovered at 375°F (190°C) for 30-35 minutes or until bubbly and the cheese is melted.

Notes
